Dorito Taco Salad

Easiest Meal on the planet!  I'm realizing now it's looking very similar to the Nachos I made the other night, except I used Doritos this time :)

Dorito Taco Salad
1 lb Ground Beef
1 tsp Cumin
1 tsp Cayenne Pepper
Salt & Pepper
1 Can Refried Beans
Doritos
Shreds Lettuce
Mild Cheddar Cheese
Black Olives
Jalapenos
Salsa
Ranch (if you live in TX, we add Ranch to everything!)

Brown ground beef in a skillet with Cumin, Cayenne, Salt & Pepper.  Heat up Refriend Beans in Microwave.  Assemble Salad: Doritos, Ground Beef, Refried Beans, Cheese, Black Olives, Jalapenos, Salsa – Ranch (if desired).

If you want to go all out and make it a true taco Salad then make homemade tortilla bowls.  Crumple a piece of foil into a ball and place on a cookie sheet.  Drape tortilla over foil ball and spray with cooking spray to hold the shape.  Cook at 400 degrees for 8 – 10 minutes.

The Perfect Weeknight Meal

I'm always looking for easy recipes that I can make on a weeknight that won't take up my entire evening!  Also, a consideration for me is the number of dishes my meal is going to create - I HATE DISHES! I don't know why, but it's just one of those things I DESPISE doing!  I was going to just make plain ol Ravioli the other night, but decided to change it up a little bit and made my own little recipe. Literally the Easiest/Cheapest/Fastest/Plainest Recipe there is. Just the way I like it!

Ravioli Casserole:
1 Package Frozen Cheese Ravioli (or whatever kind you prefer)
1 - 2 Cups Mozzarella Cheese (depending how much you want)
1 1/2 cups Ragu Traditional Marinara Sauce
Parmesan Cheese 

Follow directions on the back of the ravioli package.  Once pasta is cooked, place in a casserole dish and cover with cheese and Marinara sauce.  Cook for 15 minutes at 250 degrees. Sprinkle with Parmesan Cheese. Voila!

Serve with a Side salad and Garlic Bread.  



Do you ever make-up your own recipes?  I think I need to do this more often.
