Valentine's Sugar Cookies

I made these cookies last year Valentine's Day and they were a HUGE HIT!

I of course got my inspiration from the one and only Pinterest {original pin below with Instructions}!  These were really delicious, however the Royal icing got hard and crunchy!  Have you ever used Royal Icing before?  Any tips for the next time I try this???
