Pinned It/Did It - The BEST Dessert EVER!


First of all I have to say that this is BY FAR one of the best s'mores desserts I've ever made.  The good thing about this dessert is that it gets better with time!





It's actually pretty simple to make too.  Below is the Recipe courtesy of Baked Perfection (my revisions/suggestions are in pink)

S'more Cookie Bars

1/2 cup butter, room temperature
1/4 cup brown sugar
1/2 cup sugar
1 large egg
1 tsp vanilla extract
1 1/3 cups all purpose flour
3/4 cup graham cracker crumbs (approximately 7 full graham crackers) - put grahm crackers in a baggie and use a rolling pin to smash
1 tsp baking powder
1/4 tsp salt
2 super-sized (5 oz.) dark chocolate bars (e.g. Hershey’s) - I used Milk Chocolate - Delicious
1 1/2 cups marshmallow creme/fluff (not melted marshmallows) - 1 container is probably enough, but I bought 2 and used probably 1 and 1/2 containers

Preheat oven to 350°F. Grease an 8-inch square baking pan.
In a large bowl, cream together butter and both sugars until light. Beat in egg and vanilla.
In a small bowl, whisk together flour, graham cracker crumbs, baking powder and salt. Add to butter mixture and mix at a low speed until combined. Divide dough in half and press half of dough into an even layer on the bottom of the prepared pan. Place chocolate bars over dough. Two 5 oz. Hershey’s bars should fit perfectly side by side, but break the chocolate (if necessary) to get it to fit in a single layer no more than 1/4 inch thick. Spread marshmallow fluff evenly over the chocolate layer.
Place remaining dough in a single layer on top of the fluff. This is most easily done by putting the second half of the dough in a gallon size freezer bag. Use your palms to flatten it out, and then use scissors to cut down both long sides of the bag, so it will open up book-style. Open it up carefully, and the dough will stick on one side of the bag. Then place the bag, dough side down, on the other three layers. From there peel the bag up ad spread the dough where it is uneven.
Bake for 30 to 35 minutes, until lightly browned. Cool completely before cutting into bars. These are MUCH better when they are cooled!  Go ahead and eat yourself a piece when they are hot, but just remember they will be even BETTER the next day.  My first impression was that they weren't THAT Great!
Makes 16 cookie bars.

Would you Eat THIS?


If you are one of my regular readers you probably already know that I got 2 new kitties.  Well, my husband hasn't been doing a very good job of cleaning out their litter box... I'm sorry to have to share this with you, but it's just DISGUSTING!


Haha - I would NEVER show you guys that, it's actually Kitty Litter Cake.  Have you heard of it?  Actually quite delicious if you can get past the looks of it...

The only thing I would recommend changing is the amount of Pudding you use.  It calls for 2 boxes, but after I made it all, I think I probably only used a quarter of the first box.  You really don't need a lot of pudding, you just want the cake to be moist  Also, I used Golden Oreos for the top instead of Vanilla cookies.

Kitty Litter Cake


Original recipe makes 20 servings

  1. Prepare cake mixes and bake according to package directions (any size pan).
  2. Prepare pudding according to package directions and chill until ready to assemble.
  3. Crumble sandwich cookies in small batches in a food processor, scraping often. Set aside all but 1/4 cup. To the 1/4 cup add a few drops of green food coloring and mix.
  4. When cakes are cooled to room temperature, crumble them into a large bowl. Toss with 1/2 of the remaining cookie crumbs, and the chilled pudding. You probably won't need all of the pudding, you want the cake to be just moist, not soggy.
  5. Line kitty litter box with the kitty litter liner. Put cake mixture into box.
  6. Put half of the unwrapped tootsie rolls in a microwave safe dish and heat until softened. Shape the ends so that they are no longer blunt, and curve the tootsie rolls slightly. Bury tootsie rolls randomly in the cake and sprinkle with half of the remaining cookie crumbs. Sprinkle a small amount of the green colored cookie crumbs lightly over the top.
  7. Heat 3 or 4 of the tootsie rolls in the microwave until almost melted. Scrape them on top of the cake and sprinkle lightly with some of the green cookie crumbs. Heat the remaining tootsie rolls until pliable and shape as before. Spread all but one randomly over top of cake mixture. Sprinkle with any remaining cookie crumbs. Hang the remaining tootsie roll over side of litter box and sprinkle with a few green cookie crumbs. Serve with the pooper scooper for a gross Halloween dessert.
